Mediterranean Bean Salad

Fresh and delicious describes this healthy, wholesome bean salad best.  It's quick and easy to put together and will keep for many lunches throughout the week.  

Serve with our Regenie's Mediterranean Falafel Chips for a side dish your guest will absolutely love.

Ingredients:

4 oz. or 1 can each of the following beans.

Black beans, Black eye peas, chickpeas, red kidney beans, pink beans

1 bunch of fresh cilantro

6 medium size radishes, chopped

1 medium onion, chopped

1 avocado

Dressing:

2 Tbl. olive oil

¼ cup of lime juice

2 tsp of salt

1 tsp black pepper

Directions:

Mix all beans in a medium bowl and toss with the olive oil, lime juice, salt, and pepper.

Let sit in the refrigerator for about 15 to 20 minutes so the beans absorb the dressing.

Top with cilantro and serve.  Great to scoop and serve with our Mediterranean Falafel Chips.
