Nothing says summer like a fresh, crisp salad. Vegetables, bright in color and flavor, picked from your garden or from your local farmer's market. Cheese that is rich, tangy and melts in your mouth. Topped with your favorite flavor of Regenie's crunchy pita chips to add just the right texture. This is one of our favorites as a side dish for a fun outdoor family barbecue. Try adding a protein of your choice to create a meal that will pair perfectly with a cool glass of Pinot Grigio and good conversation.

Ingredients:
2 cups Regenie's Pita Chips (flavor of your choice), crumbled - place in plastic bag and roll with rolling pin gently
1 bag romaine lettuce
1 can (15oz) chickpeas
3/4 cup of tabouli (pre-made or use our favorite easy recipe)
1/2 cup feta cheese
1 tomato
1 cucumber
1 small red onion
(add your choice of protein to make the salad the perfect meal: shredded chicken breast, steak tips, grilled shrimp, seared tuna - the options are endless!)
In a large bowl, empty bag of romaine lettuce. Drain the can of chickpeas and place chickpeas on the lettuce on one side of the bowl. Place tabouli on lettuce on the other side of the bowl. Slice tomatoes, cucumbers and red onion and place on center of lettuce. Place protein on top. Sprinkle salad with feta cheese and toss with dressing. Top with our Bare Naked Pita Chips and enjoy!
